Kale Varieties: Curly, Dinosaur (Lacinato), and More

Kale comes in several varieties, each with a slightly different leaf shape and texture.

Curly Kale — tightly ruffled leaves, crisp texture. This is the main variety Bandansuk Farm grows and sells.

Dinosaur Kale (Lacinato / Tuscan Kale) — long, dark blue-green leaves with a bumpy, textured surface; slightly more tender than curly kale.

Other varieties found internationally include Red Russian (purple-tinged frilly leaves, purple stems) and Redbor (deep purple, curly leaves).

All varieties cook similarly, though texture varies slightly when stir-fried or used raw in salads.
